A2 Milk – What is this all about

A2 milk is a type of cows milk that contains the A2 beta-casein protein. A2 protien is digested differently in the human body than the A1 beta-casein protien. Originally, all milk contained only A2. But a chance genetic mutation, which likely happened thousands of years ago, has resulted in many cattle now producing mostly A1. A2 milk has been studied in New Zealand and the Western World for many years with many positive results.

A2 milk is now known for its easy digestion. Any A2 milk on the market comes from “cows that have been selectively bred” to only produce that type of beta-casein, says Dennis Savaiano, PhD, a nutrition professor at Purdue University in Indiana.

Most milk available in the United States comes from Holstein Friesian cows — the world’s most popular dairy cattle breed — and contains a mix of A1 and A2 beta-casein. The less-common Guernsey and Jersey cows, as well as African and Asian cattle breeds, produce mostly A2 beta-casein. Luna Berry Farms has raised Jersey cows for many years and is testing our herd for the A2 protein.

What does all this mean for you?

It means that if you have trouble digesting cow’s milk and assumed you were intolerant to lactose, the natural sugar in milk, it’s possible that you’re actually intolerant to A1 beta-casein. Since A2 protein is naturally occurring in Jersey cows you will find milk sold at Luna Berry Farms to come from our local Jersey herd.

Vat Pasturized Milk

The process of heating every particle of milk or milk product, in properly designed and operated equipment, to a minimum temperature of 155ºF and held continuously at or above that temperature for at least 30 minutes. The purpose of pasteurization is to kill harmful bacteria that may be present in milk. UHP (or Ultra-Pasturized) means that the milk has been heated to a very high temperature (280ºF for 2 seconds) making a very shelf-stable product. Vat pasteurization, milk is held at 145ºF for 30 minutes and then quickly cooled. This retains a high percentage of the milk’s natural enzymes and beneficial bacteria which adds to the flavor and heath benefits of the milk. At Luna Berry Farms we will offer glass jarred Vat Pasturized milk with cream.

Cream always rises to the top

All milk contains milk fat or cream. This milk fat or milk solids generally rises to the top of the milk tank and is separated and sold separately. We at Luna Berry Farms believe that milk should be drank in its natural state and that’s with the cream. When you try our milk products you will notice a much more luxurious texture and richer flavor profile.
